The Centers for Disease Control and Prevention (CDC) notes that “people who consume fruit or vegetables that were exposed to contaminated water are at a risk of developing a foodborne illness” and there are 48 million cases of foodborne illness per year. How does contaminated water get on produce?
If the fields are sprayed with contaminated water for irrigation, fruits and vegetables can be contaminated before harvest. Also, if contaminated water or ice is used to wash, pack, or chill fruits or vegetables, the contamination can spread to those items. Diseases that can be spread through the use of contaminated water in agriculture include e. coli, salmonella, giardia, norovirus, cryptosporidium, hepatitis A, and toxoplasma.
